Baked Cabbage

from the kitchen of a friend


1 large head cabbage
1 can cream of mushroom soup -- undiluted
1 onion (8-oz) -- chopped
1 pkg cream cheese
6 tablespoons margarine
2 cups shredded cheddar cheese
salt and pepper to taste

Cook cabbage until tender, drain well.
In a large skillet saute onion and margarine.
Add soup and mix well. Add cream cheese stir till melted.
Remove from heat, stir in cabbage, salt and pepper.
Pour into greased casserole dish.

Bake uncovered at 350 degrees for 20 minutes.
Add cheddar cheese and bake 10 more minutes or until cheese is melted and slightly browned.

Baked Onions

from the kitchen of a friend


3 medium sweet onions -- sliced and quartered
2 tablespoons butter or margarine -- melted
2 tablespoons flour
1/2 teaspoon salt
1 cup milk
1 cup shredded cheddar cheese
6 round crackers -- crushed

Heat oven to 350 degrees.
Slice and quarter onions.
Place in a microwave safe dish and microwave for approximately 8 minutes.
Combine butter, flour, salt and milk. Cook over low heat until thick.
Remove from burner and add cheese.
Stir until melted.
Pour over onions and top with crackers.

Bake 45 to 50 minutes or until onions are tender and top is lightly browned.
